We take great pride in operating our pneumatic membrane vacuum press, which preserves the varietal aroma compounds. Wines produced using a long, gentle cycle in a pneumatic press, even after a long aging period in the bottle, never fail to delight with their full and rich aromas, while retaining the complex flavor components naturally occurring in our Areni and Voskehat grape varieties.
 
The grape variety will dictate whether fermentation and aging take place in stainless steel vats or Artsakh oak barrels. Artsakh oak is known for imparting defiant and strong-willed notes to the wine, bringing out the unique qualities of the local terroir and country of origin.

Red grape clusters are carefully hand-sorted, destemmed and undergo a delicate crushing, after which they are relayed into fermentation vats. After gentle processing, white grape varieties are taken directly to the press.

Attracting increasing numbers of international wine tourists, the caves near the village of Areni, Armenia are the site of significant archeological proof where ancient pottery amphoras were unearthed containing traces of wine and grape seed remains as well as essential winemaking paraphernalia dating back over 6,100 years.

At the same elevation of 1,450 meters, nestled in the rocky mountainsides, are the rolling* vineyards of traditional Armenian varieties of Areni noir and Voskehat white whose genetic codes can be traced back to Neolithic times.
